Cajun Pompano

This mild flavored fish is enhanced with a southern style cajun seasoning. You may cook  this  over a hot grill, air fryer or roast it in the oven. The sliced vegetables will add moisture  and  flavor to this dish. Enjoy this flavor packed recipe with crispy cajun fries.

Ingredients

  • 1 whole Frabelle Foods Ocean Fresh Golden Pampano 500g-600g
  • 250 grams Cajun Fries
  • 2 pieces Tomatoes, sliced
  • 2 pieces Onion, sliced
  • 2 pieces Bell Pepper, sliced
  • 2 cloves Garlic, minced
  • ½ cup Olive Oil
  • Cajun Spice Mix
  • 1 tbsp Salt
  • 1 tbsp Paprika Powder
  • 1 tsp Pepper
  • 1 tbsp Oregano
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tsp Cayenne Pepper

Step-by-Step Directions

  • 1. Clean Pompano by removing the gills and innards. Wash and let it chill in the refrigerator.
  • 2. Mix all ingredients for the Cajun spice seasoning.
  • 3. Mix tomatoes, onions, bell peppers and garlic in a baking dish. Season with 2-3 tsp Cajun seasoning and ¼ cup olive oil. Toss to coat.
  • 4. Season Pompano with Cajun seasoning. Put the Pompano on top of the vegetables. Roast for 20-30 mins in 375F oven. (Turn and flip the Pompano halfway through).
  • 5. Fry the Cajun fries in hot oil until golden brown and crisp.
  • 6. Serve Cajun-spiced Pompano with the roasted vegetables and cajun fries.
