Ginisang Sinigang Na Salmon Sa Miso

The Salmon Sinigang pack is so convenient that you don’t need to buy Salmon head and Salmon Belly separately. Moreover, there is a huge difference in using fresh tamarind versus the powdered sinigang seasoning so it is up to everyone whichever they want to use. This recipe is perfect for rainy days or even if the weather is hot as the sourness of fresh tamarind gives freshness to this recipe.

Ingredients

  • 1 Pack Salmon Sinigang Pack
  • 1 cup Tamarind, raw
  • 1.5 cups Water
  • 3 tbsp Vegetable Oil
  • 1 thumb-sized Ginger, sliced
  • 3 cloves Garlic, minced
  • 1 whole Onion, sliced
  • 1 whole Tomato, sliced
  • 2 tbsp Miso (Fermented Soy paste)
  • 2 cups Rice wash or Water
  • 1/2 cups Radish, sliced
  • 4-5 pcs. Okra
  • 2-3 pcs. Finger Chili
  • 1-2 pcs Bird’s Eye Chili
  • Fish Sauce, to taste
  • 1 bundle Mustard Leaves

Step-by-Step Directions

  • 1. Simmer fresh tamarind and 1.5 cups of water for 5 minutes or until tamarind becomes tender. Mash the tamarind to extract the juice then strain to remove the seeds and skin. Reserve the extract.
  • 2. Pour vegetable oil in a pot over medium heat. Sauté ginger, garlic and onion till aromatic. Add tomatoes and continue sauteing till soft and tender.
  • 3. Add miso paste and stir to combine with the aromatics. Add Salmon head and bellies. Flip to coat with aromatics.
  • 4. Add rice wash, tamarind extract (you may add less or more depending on the sourness), all of the vegetables except for the mustard leaves. Cover and simmer till salmon and vegetables are fully cooked.
  • 5. Add fish sauce. Adjust amount depending on the saltiness. Add mustard leaves then turn off heat.
  • 6. Serve hot.
