  • 1. Cook bacon in a non-stick pan over medium heat. Add sliced onions and saute till fully cooked. Turn off heat and transfer to a clean bowl.
  • 2. Add mushrooms, whole kernel corn, frozen broccoli, red bell pepper, tomatoes and spring onions to the cooked bacon and onion. Toss to mix.
  • 3. In a separate bowl, mix heavy cream and eggs. Season with salt and pepper.
  • 4. Slice the top of the Ciabatta. Remove the inside of the Ciabatta leaving you with just the crust.
  • 5. Put the Cheddar slices inside the Ciabatta.
  • 6. Add the cooked bacon and veggie mix on top.
  • 7. Fill the Ciabatta with egg and cream mixture then top with the grated Gruyere cheese.
  • 8. Bake for 20-30 minutes in a 350F preheated oven.
  • 9. Serve hot.
