Bacon, Veggies and Cheese Ciabatta Quiche
Make your normal sandwich extra special by combining bacon, veggies and cheese and making ciabatta as a vessel for this quick and easy quiche recipe. Although Quiche usually uses a pie crust, you may use frozen ciabatta as a vessel for the bacon, veggies, cheese, cream and egg mixture. It is easier, more convenient and very delicious.
Ingredients
- 200g Frabelle Foods Hickory Smoked Bacon
- 1 whole Onion, sliced
- ⅓ cup
- ⅓ cup Jolly Mushroom Stems and Pieces
- ⅓ cup Jolly Whole Kernel Corn
- 1 whole Red Bell Pepper, diced
- ½ cup Frozen Broccoli, sliced
- 2 whole Tomatoes, sliced
- 2 tbsp Spring Onions, sliced
- 1 pack Lactima Cheddar Cheese Slices
- ½ cup Gruyere Cheese, grated
- 1 cup Heavy Cream
- 4 pcs Eggs
- 4 pcs Frozen Olive Oil Ciabatta
- Salt and Pepper, to taste

Step-by-Step Directions
- 1. Cook bacon in a non-stick pan over medium heat. Add sliced onions and saute till fully cooked. Turn off heat and transfer to a clean bowl.
- 2. Add mushrooms, whole kernel corn, frozen broccoli, red bell pepper, tomatoes and spring onions to the cooked bacon and onion. Toss to mix.
- 3. In a separate bowl, mix heavy cream and eggs. Season with salt and pepper.
- 4. Slice the top of the Ciabatta. Remove the inside of the Ciabatta leaving you with just the crust.
- 5. Put the Cheddar slices inside the Ciabatta.
- 6. Add the cooked bacon and veggie mix on top.
- 7. Fill the Ciabatta with egg and cream mixture then top with the grated Gruyere cheese.
- 8. Bake for 20-30 minutes in a 350F preheated oven.
- 9. Serve hot.
