Soy-Ginger Steamed Pompano

The mild and succulent taste of Golden Pompano is best complemented with simple combination of fresh ginger and lightly sweetened soy sauce. Steaming is one of the ways you can cook this premium fish but you can also try other cooking methods like frying and grilling. Serve this easy recipe with a dash of sesame oil and sprinkling of fried garlic and chopped spring onion to your family and friends.

Ingredients

  • 1 kg Fresh Frozen Pompano
  • 2 Tbsp Regular Soy Sauce
  • 2 Tbsp Water
  • 1 Tbsp Dark Brown Sugar
  • 1 tsp Chinese Cooking Wine
  • 1thumb-sized Fresh Ginger, julienned
  • 1 tbsp Sesame Oil
  • 1 tbsp Fried Garlic
  • 1 tbsp Chopped Spring Onion

Step-by-Step Directions

  • Slowly thaw frozen Pompano in chiller overnight then remove gut, gills and internal organs.
  • In a bowl, mix soy sauce, water, brown sugar, Chinese cooking wine and ginger.
  • Put Pompano in a heat resistant glass casserole or aluminum tray. Pour soy-ginger mixture then cover with plastic wrap or foil.
  • Steam Pompano over rapid boiling water for 20-30 minutes.
  • Remove cover then sprinkle Pompano with fried garlic, chopped spring onion then pour sesame oil.
  • Serve hot.
